Vengaya Sambar

Being a tyro at cooking, I always had this apprehensiveness toward’s maami’s recipes. Most of the time, I will watch Thamu’s cooking or Tarla dalal’s book and do something.

Today I tried to break the ice and did the traditional vengaya sambar. My mom did congratulate me after tasting it. What more credits do I need?

Vengaya Sambar


1/2 cup red gram dal (thuvaram paruppu)

1 tsp turmeric powder

2 sprigs curry leaves

1 – 2 cups peeled Madras onions (chinna sambar vengayam/ulli)

3 – 4 green chillies, slit

1 lemon sized ball of tamarind

oil to fry

salt to taste

For the Masala:

1/4 tsp asafoetida

1/2 tsp fenugreek seeds

1 tbsp bengal gram dal (kadala paruppu)

3 dried red chillies

2 tbsp coriander seeds

3 tbsp grated coconut


1 tsp mustard seeds

2 sprigs curry leaves


1) Fry each of the Masala items separately and grind them to a fine paste. (Always use ery lil oil for frying and if possible use gingelly oil or olive oil)

2)Cook dal with turmeric powder in a pressure cooker.

3) Boil tamarind in boiling water and extract the pulp.

4) Add two tsp oil, add mustard. Once it splutters, add the curry leaves, green chillies, onions, and fry until onions are soft and brown.

5) Add the tamarind extract and salt and cook for 5 minutes.

6) Add cooked dal and ground masala to the mixture. (Keep stirring and simmering, the masala shouldn’t end up like vadais in your sambar).

6) Garnish with coriander leaves. Serve with idli or dosa or rice with a dash of ghee 🙂 .

  5. @ttm – Sure, Ella recipeumm theriyaadhu. amma kitta ketturikkan. Firstu iva edhukku thedeernu kekuraanu oru look vitaanga. But she has promised to teach me. Will post it once I am done with that 🙂
